Is there any reason why I should not have new tires for my Huracan mounted using a Coates machine? I've heard only a Hunter or similar is recommended. If so, why?

Wheel damage. Look for someone with a Hunter Auto 34s and Road Force Balancer. With that equipment they should know what they are doing.
