Sorry, I don’t have the specs but I do have a curiosity about the color of your car in your avatar? That’s a pretty cool color - what is it?

FWIW I too do not know the exact spec.
I would offer 18 - 30 foot pounds.
Over time I have had issues with header bolts losing.
I recall ARP brand makes locking header bolts, which I have never used.
A trick can be to "ramp up" the torque... start in the center, work out left to right, with 10 then 18 then 25 final.
Big question I have is if the bolts do loosen, can you retorque once the engine is reinstalled?

Use all new lock washers and yes, start in the center. I think ramping up torque is a bit overkill but won't hurt anything. Yes, you can retorque or at least tighten them once in the car but it's not easy.

If you really want them to stay put, you can cross-drill the bolt heads and safety-wire the lot of them.
