Cheap book. Very recent. Covers all things Lamborghini in a light general way.
Amazon.com: Lamborghini: Supercars from Sant'Agata (Haynes Classic Makes) (9781844250943): Anthony Pritchard: Books

About the Factory and company history. Little about the cars, but shows what the company itself has been through.
Amazon.com: Lamborghini: Forty Years (9780760319451): David Jolliffe: Books

Older but inexpensive. Good to buy used. Good general history with good general info on all the cars. Ends with the Diablo. Written by consumer reports.
Amazon.com: Lamborghini: Supercar Supreme (9780756752859): Consumer Guide: Books

If you can find a cheap copy, this is a great book. It is old, but has a ton of info and history. The author seemes to have spoken a lot with Bob Wallace, who was at the comany from very early on and heavily involved with the development of the early cars.
Amazon.com: Complete Book of Lamborghini: Pete Lyons: Books

I think these are good starters. Pick a couple from this list that sound interesting to you. If you get into a narrower Lamborghini niche, there are other books that would better serve you.
