Basicly the same reason a crotch rocket can beat almost any supercar out there; Power to weight ratio is the key.
A Suzuki Hayabusa has 180hp and the bike weighs near 500 pounds. If the Hayabusa weighed 3000 pounds (the common weight of a car) with the same power to weight ratio it would have over 1000hp.
On the other note, I'm sure the Ferrari driver wasn't an expert or has any practice doing 1/4 launches with his car. I don't know about you guys, but dropping the clutch on these types of cars isn't the most greatest thing to do. Especialy with AWD Lamborghinis.
