There are many more tires available for 17” wheels and for whatever width is chosen, it is possible to choose an aspect ratio, which results in a diameter that is fairly close to the OEM tire. The biggest change to the “set-up” is really in going to a wider tire and maybe different rubber compound.
With 265/45-16 racing tires (Kumho VictoRacer V700) on the rear (widened OEM rims to 10”) my Jalpa handles exemplary well (and predictably) on the racetrack and obviously also on the street.
